In This Week’s Box: Tomatoes, Cherry Tomatoes. Sweet Onions, Eggplant, Basil, Fennel, Rainbow Carrots and Cranberry Beans
I think this might be my favorite box of the season thus far. The colors are so striking and summery and the flavors are just as bright. There is nothing like summer to make me want to eat! Now, let’s talk about those beans. Perhaps you have seen cranberry beans for sale in the bulk isle of the co-op. These are the same except that they have not been dried and so will cook up in a much shorter amount of time. They are a fresh shelling bean which means that first you need to take them out of their shells and cook them in a pot of boiling water until they are tender. After that there are many possibilities, they can be made into a summery stew with tomatoes, eggplant and summer squash, or a salad with plenty of fresh herbs. A simple way that I like to make them is to add olive oil, garlic, salt and sage to the pot of water that I boil them in, then when they are tender, grind some pepper over them and squeeze on a little lemon juice. I like to serve these with pasta with plenty of parmesan cheese. However you choose to prepare them, I hope you enjoy these little summer treasures, it is truly a short window of time that we get to eat them fresh.

On behalf of the The Nelson Ranch, our farming neighbors, we are extending an invitation to you to join them at their Open House and Farm to Table Dinner on Saturday August 26th. The Open House will be from 2:00-4:30, and the dinner is from 5-7pm.
The Open House will have events for all ages, including farm tours, horse-drawn hayrides, information about conservation projects, and heritage displays. Bring your friends and family to experience life on their farm.
The Farm to Table Dinner will feature Calliope Farm produce and wines from Stottle Winery. The dinner includes a 4-course meal with wine pairings for each course.
