In This Week’s Box: Carrots, Baby Bell Peppers, Spinach, Purple Potatoes, Lettuce, Cucumbers, Sweet Onions, Japanese Eggplant
The shorter days and the slight shift in the weather are bringing with them some of the crops that love the cooler temperatures. You will notice that spinach is back this week, it’s a staple of spring and fall, but struggles a bit during our warmest months. I adore spinach and am grateful for its return, even as I wish these days of cucumbers and lettuce would last forever. I treasure this time of year when we see the things we will be eating throughout the winter start to be ready at the same time that the quintessential vegetables of summer, such as peppers and eggplants, are still available. September makes for good eating!
