In This Week’s Box:  Tomatoes, Basil, Garlic, Beets, Purple Potatoes, Spinach, Broccolini, Lettuce and Kohlrabi

There is frost in the air and a big harvest moon out there tonight, and yet there is still a bit of summer in the boxes this week.  This time of year when it feels a little too early to turn on the heat, I like to keep the chill out of the house by roasting vegetables for dinner, and roasted beets are a family favorite.  I personally feel that is difficult to prepare a beet badly, but roasting is certainly the best way that I can think of cooking them, they get so sweet.  Also popular these days, is spinach sautéed in butter with a ton of garlic.  For those who may wonder what broccolini might be, it’s just a smaller, more tender broccoli and can prepared in the way that you would normally cook it.
