In This Week’s Box: Acorn Squash, Mini Bell Peppers, Carrots, Cilantro, Cipolini Onions, Hakurei Turnips, Arugula and Chard Verde da Taglio
This week brings a few unusual vegetables that are really just different versions of vegetables you are already familiar with. Let us start with the chard. This is an Italian variety, new to us this year and very good. It is sweet and tender and similar to spinach when cooked. Cipolini onions are also an Italian vegetable, excellent for roasting, as it caramelizes them and brings out their sweetness. I often use them just as I would a yellow onion, but they are a bit stronger and chopping them tends to make the eyes water a little more fiercely. You already know about the merits of Hakurei turnips, but let me just say that their greens are very succulent right now and are begging to be added to your dinner. The turnips themselves also seem to be in their prime at the moment, it has been difficult for all of us to stop snacking on them.
Wishing you a week of good meals,
The Calliope Crew
